Ruby's Plum Glazed Chicken

This is a mildly spicy dish. Prep time varies somewhat and many variations on ingredients are possible.

Directions

Preheat oven to 375 degrees F. Rinse the chicken and pat the pieces dry with paper towels. Arrange chicken in a baking pan so the pieces don't touch. Combine the green onion, soy sauce, chili paste, ginger root and garlic salt. Brush the surface of the chicken with about 2 tablespoons of the mixture. Bake chicken for 30 minutes.

While the chicken bakes, stir remaining chili paste mixture into the plum jam in a small saucepan. After 30 minutes take the chicken out of the oven and brush with about half of the plum mixture. Return to the oven and bake for 15 minutes more until chicken is cooked through. The plum sauce will turn very dark, from ruby red to an almost blackish color but should remain shiny. If it starts to look charred lower the hat and cover with foil until the chicken is cooked through. Cook times will vary according to the size of the chicken pieces you use. Heat the remaining plum sauce and spoon over the chicken before serving.

Best if served with rice and oriental veggies.
