Preheat oven to 450 degrees.
Lightly beat eggs with salt. Slowly add flour and milk, blending until smooth. Add sugar to mixture.
Pour melted butter into two 8" square pans. Add half of batter to each pan and bake for 15 minutes until pancakes rise, puff, and are golden.
Sprinkle with powdered sugar, any desired topping and serve. I tend to vary this recipe a lot, adding some vanilla extract, some "butter rum" syrup, even coconut to the batter. Fresh fruit, blueberries, strawberries, or even bananas make a great topping. Since this makes two 8x8 pancakes, I tend to cut them in half and stack 'em.
