Bacon Wrapped BBQ Shrimp

As though shrimp wrapped in crispy bacon were not tempting enough, a touch of BBQ seasoning spices things up just for fun. This makes dinner for two or appetizers for four. Preparation plus cooking time is about an hour.


Directions

Clean and devein 16 jumbo shrimp, leaving last section of tail. Wrap each with ½ slice of bacon, secure with toothpick. If smaller shrimp are used, precook bacon somewhat.

Preheat oven to 450 degrees F (230 degrees C).

Preheat oven to Line 15x18 baking pan with aluminum foil and place baking rack in pan. Place shrimp on rack sprinkle with barbecue seasoning, turn and repeat. Alternatively, baste lightly with your favorite BBQ sauce. If you choose sauce over seasoning, you will need to repeat the basting half way through the cooking process. Set seasoned shrimp aside for 15 to 20 minutes to permit seasoning (or sauce) to permeate shrimp and bacon.

Bake wrapped shrimp in preheated oven for 10 to 15 minutes. Bacon should be crisp when removed. Overcooking will, however, leave shrimp tough. Since ovens vary, watch shrimp closely.
