Baked Burritos
Main Dish
This makes 6 or so burritos suitable for your main dish or as a side for a Mexican meal. Good with a green salad or a soup, this takes about 40 minutes to prepare and cook.
Ingredients/Shopping List
- 1 (16 ounce) can black beans
- 1 (16 ounce) package shredded cheese
- 2 chicken breasts, cubed
- cilantro
- 1 (16 ounce) can corn
- jalapeños
- 1 (2 ounce) can black olives
- ¼ cup salsa
- ¼ cup sour cream
- 1 (16 ounce) can diced tomatoes
- 6 burrito-size flour tortillas

Directions
Fry chicken in skillet until white all through. Preheat oven to 350°F.
Add beans, cilantro, corn, jalapeños, olives, tomatoes, ¼ cup salsa, and ¼ cup sour cream.
Simmer 10 minutes. Stir continuously.
With a slotted spoon, spread mixture in skillet onto tortillas. Cover with shredded cheese. Fold tortillas to make burritos.
Place burritos in 13x9 greased baking dish. Cover with liquids from skillet. Top with cheese.
Bake at 350°F for 20 minutes. Cheese should begin to crisp before removing.
Note:
- A good variation on this to make a smoother burrito is to substitute refried beans (black or otherwise) for the black beans and tomato sauce for the diced tomatoes.
- ¼ of an onion diced makes a good addition inside the burrito or as a topping.
- Bell peppers, red, green, and yellow, can be substituted for the jalapeños to make a milder and more colorful burrito.
