Appetizer, Side Dish

Potatoes, onions, and broccoli are mixed and baked in a casserole dish. With little more to it than that this is a very easy recipe. Variations include adding cauliflower or nearly any favorite vegetable. This can also be done on the grill, if you so desire. 15 minutes to prepare and about 45 minutes to cook is an hour well spent. You get about 4 servings if you use this as a side dish. I've had success serving this in small bowls as appetizers. Supply your guests toothpicks or shrimp forks to pick up the veggies.


Directions

Preheat oven to 400°F. Oil a large, shallow baking dish very lightly.

Combine vegetables in prepared baking dish, salt lightly. Brush with olive oil, turning to coat. Sprinkle with dry soup mix.

Bake 30-45 minutes until vegetables are tender. Test for tenderness with fork.
