Bison Burgers

If you are out in the back yard and get the opportunity to shoot a wandering buffalo, go ahead! They make great burgers. Bison meat is not all that uncommon in the grocery these days. I find it a little expensive, and not such an exciting taste that I just have to have it very often. It does taste good though and makes an interesting addition to your repertoire. This recipe is for 2 but is easily scalable.
Ingredients/Shopping List
- ½ lb ground bison
- 1 egg, beaten
- 1 slice smoked harvarti cheese
- ½ tsp dry mustard
- 4-5 green olives
- salt, pepper
- 1 shallot, finely chopped
- french bread
Directions
Break bison apart and mix with egg, salt, pepper, and dry mustard. Mix well with hands to insure even spread of ingredients throughout the meat.
Brown in a frying pan with the chopped shallot. Cook to medium doneness, rare bison tastes bad.
Top with chopped green olives and havarti. Serve as patties with sides or on toasted French bread slices as sandwiches.
When serving as sandwiches, you may wish to microwave the burgers to melt the cheese before placing them on bread.
