Put the Brats, onions, peppercorns, cloves, garlic in a saucepan, pour in the beer.
Bring to a boil and simmer the brats 15 minutes. Drain. This can be done the night before or earlier in the day if needed.
Grill the brats about 10 minutes. If you spray the brats with water while grilling the skin will crisp nicely.
Serve on the Roll with mustard and Hot peppers or other relish. Great side dishes include baked beans, potato salad (German or otherwise), devilled eggs, sauerkraut, or corn-on-the-cob (especially if you do it on the grill!).
Buying bratwurst. Real bratwurst is white. No offense to Johnsonville, but tasty as their brats may be I don't think they're real bratwurst. Sorry guys. Your local grocery may make their own bratwurst. It is virtually certain you can find one that does, but if you can't, call some of the local meat services or meat lockers and see if they have any. If you've got an old fashioned butcher shop nearby (ok, nobody does, but maybe you've got a deli) they either make bratwurst or know who does.
