Chicken Broccoli Casserole
Main Dish
This is a small casserole yielding 2 servings. Total time from start (10 minutes preparation) to finish (1 1/4 hours cooking) is about 1 hour 25 minutes. This is fairly versatile, can be accompanied by any number of light soups or sides, and works well on its own.
Ingredients/Shopping List
- 1/3 head broccoli (florettes)
- 2/3 can cream of celery soup
- 2 boneless skinless chicken breasts
- parmesan cheese, grated
- 2 slices swiss cheese
- 1 1/3 cups milk
- 1/3 box bread stuffing mix (I like Stove Top cornbread stuffing)

Directions
Preheat oven to 375°.
Combine soup and milk; pour enough into casserole to cover bottom. Use a small casserole dish, 5x9 or smaller.
Add chicken and cover each breast with slice of swiss.
Add broccoli; cover with remaining soup mixture.
Sprinkle with stuffing mix. Bake for 45 minutes.
Sprinkle with parmesan; return to oven for 15 minutes.
Variations: Walnuts or water chestnuts make this dish deliciously crunchy. Onions or garlic add considerable flavor. Onion or Garlic powder can be added to soup mixture if you don't want to use the fresh ingredients.
