I wanted to call this "Chicken Salad for the Crapulous" but then I would have had to explain
The fruity sweetness of this chicken salad tends to cause excesses. Sometimes better served on crackers than as a sandwich, it also works as an elegant side dish. 6 servings require about 6 minutes to prepare.
Ingredients/Shopping List
- 2 (10 ounce) cans chicken chunks, drained
- 1 cup seedless green grapes, halved
- ½ cup sliced almonds
- ½ cup chopped celery
- 1 (8 ounce) can mandarin oranges, drained
- ¾ cup creamy cucumber salad dressing

Mix. Chill.
Yes, it's that simple.
If you want to complicate things, bake or broil 1 large or two smaller boneless skinless chicken breasts. Cube them and substitute for the canned chicken chunks. I like this dish both chunked and shredded.
Serving suggestions:
- Spread on crackers.
- Serve between thin slices of toast. Vary by using rye or pumpernickel.
- Use as a side dish for a meal of broccoli cheese soup and crudités
- If you don't like celery, use celery salt. It changes the flavor substantially.
- This is delicious in a pita.
