Crab Meat Salad

Italian sour cream mayonnaise dressing makes this chilled salad a treat. You can use Crab Meat or Imitation Crab. I find surimi (imitation crab) much easier to find, just as enjoyable, and much less expensive. Chances are if you use surimi you are eating hake or pollock. I know a few people who think surimi is not "good" fish, but, au contraire it assuredly is. This takes about 2 hours to prepare and yields roughly 6 servings. In a "sit down" sort of part where guests lounge about your living room instead of the traditional cocktail party shuffling, this can be served in small bowls with a shrimp fork as an appetizer.
Ingredients/Shopping List
- 1/2 cup diced red onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced celery
- 1 pound (imitation) crab meat, flaked
- 1/4 cup sour cream 1 1/2 cups mayonnaise
- 2/3 cup Italian-style salad dressing
- 2 tablespoons lemon juice
- 1/2 teaspoon dried oregano
- salt and pepper to taste
Directions
Mix sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
In a separate bowl, combine onion, green pepper, celery and imitation crab meat.
Pour the dressing mixture into the crab mixture and toss lightly to combine.
Cover and chill at least 2 hours before serving.
