Curried Tuna Melts

This is your standard Tuna Melt recipe with the added fillip of a bit of curry. Cadged from back issues of "Southern Living" circa 1995 it is a tried and true, often-tested favorite. It serves about four.
Ingredients/Shopping List
- 6 ounces canned tuna in water -- drained and flaked
- 3 each eggs -- hard boiled
- ¼ cup green onions -- chopped
- 1/3 cup reduced-calorie mayonnaise
- ½ teaspoon curry powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 8 slices rye bread
- 4 ounces monterey jack cheese
Per serving:
Protein: 27g Fat: 20g Carbohydrate: 33g Calories: 426 Sodium: 988
Directions
Combine first 7 ingredients and spread onto 4 slices of bread.
Sprinkle each with cheese and top with another bread slice to make 4 sandwiches.
Heat a large nonstick skillet over medium heat. Add sandwiches and grill about 2 minutes each side until cheese melts and bread is golden. Serve immediately.
