Garlic Potato Soup

A very basic potato soup recipe with plenty of room for variation. Preparation is 5 minutes. Cooking time is 20 minutes. Serves about 4.
Ingredients/Shopping List
- 1 tablespoon of butter
- 6 garlic cloves, crushed
- 1 pound of potatoes, diced
- 2 ½ cups mushroom broth
- few drops of Tabasco sauce
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh parsley
- ¼ cup feta or mozzarella cheese, thinly sliced
Directions
In a saucepan heat garlic and diced potatoes for 5 minutes. Add stock; cover and simmer for 20 minutes.
Mash the potatoes. A hand mixer works well for this step.
Stir in parsley, vinegar, and tabasco.
When serving, sprinkle with cheese. Goes well with garlic bread.
