Mustard Green Beans

A tangy mustard sauce over green beans is a summertime favorite. Good when you're grilling. This takes less than 30 minutes to prepare. You get about 6 servings.
Ingredients/Shopping List
- 3/4 pound fresh green beans, trimmed and snapped
- 1 tablespoon honey mustard
- 2 tablespoons distilled white vinegar
- 2 tablespoons extra virgin olive oil
- 1/4 cup chopped fresh chives
- salt and pepper to taste
Directions
Fill a large sauce pan with water and bring to a boil. Cook beans uncovered 3-4 minutes. Do not over cook, green beans should still be crisp.
Remove from heat, drain, and immerse in a medium bowl filled with enough ice water to cover.
Mix chives, honey mustard, olive oil, and vinegar. Salt and pepper to taste.
Drain ice water. Pour honey mustard mixture over beans. Stir to coat.
