Onion Rings

This is the simplest form of onion rings. There are a lot of variations on the batter, some of which will be showing up in this list. These are very basic and take 10 minutes to prepare, 10 minutes to cook. You get about 4 servings.
Ingredients/Shopping List
- 1 quart oil for frying
- 1 cup dry pancake mix
- 1 large Spanish onion, sliced into rings
Directions
Heat the oil in a large, deep skillet over medium high heat.
Prepare pancake mix according to package directions. I like buttermilk pancakes for this, choose according to your preference.
One at a time, dip rings into batter, then into hot oil. Fry until crispy and browned, about 3 minutes. Drain on paper towels.
I have a deep fryer. I flash fry them at 375°F for 3 minutes.
