Orange Salmon Rollups
Appetizer
Only ten minutes to prepare, this is an easy appetizer for about 4. You also get a side salad, so it's 2-for-1! This recipe is easily scalable for parties and such.
Ingredients/Shopping List
- 2 garlic cloves, pressed
- ½ teaspoon ground ginger
- 1 tablespoon fresh lemon juice
- 1 (7 ounce) can mandarin oranges
- 1/3 cup finely chopped green onions
- 1 ½ tablespoons peanut butter
- 1 (10 ounce) can salmon, drained and flaked
- ¼ cup low sodium soy sauce, plus 1 tablespoon divided
- 4 whole wheat tortillas
- 1 tablespoon rice vinegar
- lettuce for a tossed green salad

Directions
Drain oranges, reserve 2 tablespoons of juice.
Chop ½ cup of oranges. Reserve remainder.
Place salmon in bowl. Add garlic, ginger, green onions, lemon juice, peanut butter, and 1 tablespoon soy sauce. Mix well.
Fill each tortilla with about ¼ of the mixture. Wrap and serve. Try to have a small amount left over.
Combine ¼ cup soy sauce with remaining mixture, reserved orange juice, ad vinegar. Mix well to use as a dipping sauce.
Add the remaining oranges to lettuce and some croutons for a tossed green salad.
