Oyster Sauce

Oyster sauce more or less says it all. I find this sauce tasty, but it is not for everyone. It does not keep well once prepared, so must be used at once. It's useful life expectancy in the refrigerator is less than 3 days.
Ingredients/Shopping List
- 4 tbsp Butter
- 1 Cup onion (chopped)
- 8 oz. Oysters
- 2 Cups oyster water (liquid from the oysters, add wate as needed to make 2 cups)
- 1 tsp Thyme
- 1 tsp Oregano
- 2 tsp Basil
- 4 Garlic flakes (minced)
- 4 tbsp Butter
- 2 tbsp Flour
- 1 Cup cream
- Salt and pepper to taste
Directions
Chop green onions. Heat butter. Add chopped onions, sauté until soft. Mix oysters, oyster water, thyme, oregano, basil and minced garlic. Stir the mixture.
In a separate sauce pan, mix butter and flour. Warm, stirring often, to make a thick mixture.
Combine with other mixture. Cook 5 minutes over medium heat.
Remove from heat. Add cream, salt and pepper. Stir well. Keep chilled.
