Pork and Pineapple Stir-Fry

This is a very quick, simple recipe. I like to serve this with fried noodles, but that recipe will have to wait for another occasion. It's great over steamed rice. 20 ninutes to prepare and only 12 minutes to cook make this a good after-work meal; serves 4.
Ingredients/Shopping List
- 1 fresh red chile pepper, seeded and chopped
- 1 clove garlic, crushed
- 1 onion, sliced
- ½ fresh pineapple - peeled, cored and cubed
- ¼ cup plum sauce
- ½ pound boneless pork loin, cut into strips
- 1 cup trimmed snow peas
- 2 tablespoons vegetable oil
Directions
Heat oil in wok or skillet over high heat. Add garlic and onion; stir-fry 2 minutes. Reserve
Stir-fry pork strips for 1-2 minutes. Reserve.
Heat wok over high heat. Return pork and onion/garlic mixture to pan. Add pineapple, plum sauce, snow peas, and red pepper. Stir-fry for about 4 minutes. Peas should be slightly soft.
