Pork Chops Italiano
Main Dish
The tomato and pepperoni sauce makes this an unusual dish. The cashews makes it (I think) unique. This takes only 15 Minutes to prepare and about 30 minutes to cook. That makes it a meal you can make after work and still eat at a reasonable hour. You get 2 servings.
Ingredients/Shopping List
- 1 tablespoon vegetable oil
- 2 boneless pork chops
- 2 cloves garlic, minced
- ½ onion, cut into chunks
- ½ green bell pepper, chopped
- 1 sprig fresh basil for garnish
- 1/3 cup chicken broth
- ½ cup white wine 1 tablespoon tomato paste
- 1 dash Worcestershire sauce
- 1 pinch dried thyme
- 1 pinch dried parsley
- salt and pepper to taste
- ½ cup chopped pepperoni
- 1 tomato, chopped
- 1/3 cup cashews
Directions
Heat oil in a wok over medium-high heat. Evenly brown pork chops. Set aside.
Mix the garlic, onion, and green pepper into the wok, and cook until tender.
Stir in the chicken broth, wine, and tomato paste, worcestershire sauce, thyme, parsley, salt, and pepper.
Cook until heated through, then stir in pepperoni.
Return chops to wok. Cover and cook 15 minutes over medium heat, until sauce has thickened. Take care that chops are completely cooked.
Mix in tomato and cashews then cook until heated through.
Serve sauce over chops and garnish with basil.
Pasta in alfredo sauce makes a good side for this dish. Butter noodles, mashed potates, or corn also work well.
