Potato Casserole

Cook mashed potatoes with flavorful ingredients and top with crunchiness. What could be simpler than that? You get about 2 servings. This recipe is easy to double, or triple, it'll be that popular.
Ingredients/Shopping List
- 2 cups mashed potatoes
- 1 (8 ounce) package cream cheese, softened
- 1 onion, chopped
- 2 eggs, beaten
- 1 tablespoon all-purpose flour
- ¼ teaspoon salt
- 1/8 teaspoon ground black pepper
- ½ (6 ounce) can French fried onions
Directions
Preheat oven to 300°F. Grease a 1 ½ quart casserole dish.
Combine black pepper, cream cheese, eggs, flour, mashed potatoes, onion, and salt in mixer. Beat 2-3 minutes at medium speed. Pour into casserole dish. Spread fried onions evenly over the top.
Bake uncovered 30-35 minutes.
