With a mouli (or in a food processor), shred potatoes very fine. Squeeze dry. Paper towels work well for this.
Mix eggs and onion well. Add oil, lemon juice, flour, baking powder, salt, sugar, pepper and nutmeg, mix thoroughly. This can be done in a blender or food processor.
Add potatoes blend well. Heat waffle iron, oiling grids if necessary. Fill 2/3 full. Spread batter evenly.
Bake until golden brown (about 3 minutes). Remove and place on rack in 250°F oven to warm while making more waffles.
Can be served with sour cream and applesauce. For a variation, serve these with an "over easy" egg on top and a dash of hot sauce.
