Welsh Baked Eggs

This is a simple side dish that goes well with many lunch items. You get 4 servings (4 eggs). About 10 minutes to prepare and 25 minutes to cook makes this a quick addition to meals.
Ingredients/Shopping List
- 2 tablespoon butter or margarine
- 4 tablespoons single cream
- 4 eggs
- 4 small leeks, thinly sliced
- salt & freshly ground black pepper
- 4 parsley sprigs

Directions
Preheat oven to 400°.
Melt butter in saucepan; add leeks. Cook for 1 minute on high heat while stirring continuously then reduce heat to simmer. Cover and cook 5 minutes until leeks are soft.
Season lightly with parsley. Spoon into 4 ramekins.
Break an egg into each ramekin; add 1 tablespoon of cream to each. Sprinkle lightly with salt & pepper.
Bake in preheated oven for 8-10 minutes until eggs are cooked through.
